Cocktails - Môn-jito Royale
Môn-jito Royale
60ml Penmon White rum
45ml lime juice
30ml simply syrup
10-12 mint leaves
Sparkling wine
Muddle the mint leaves into the bottom of a shaker with the simple syrup. Add rest of the ingredients and shake. Double strain into glass filed with cracked ice and top with chilled sparkling wine. Garnish with mint. (Controversial by muddling mint instead of building drink in glass but I prefer not having to pick out big bits of mint!)
