Dark Daiquiri
60ml Skerries Dark rum
45ml lime juice
45ml demerara syrup (equal measures demerara sugar and boiling water)
A simple but stunning cocktail that really lets the dark rum shine - simply shake all the ingredients in a shaker and double strain (to remove all ice shards) into a chilled coupe glass.
